Alternative salad ideas that don't include tomatoes?

My husband can no longer eat tomatoes due to gout and he always takes a salad to work for lunch. He now finds salads boring without tomato, do you have some alternative salads I could make for him?

You do get used to not eating tomatoes. Trying finely shaved fennel or fresh corn kernels. What about feta, olives or adding a little pesto to the dressing? Baked sweet potato and beetroot is a winner in salads and I like to include toasted seeds for a really lovely addition. Put half a cup each of pepitas, sunflower and sesame seeds in a pan (no oil) and dry roast over a medium flame til they’re golden brown, and start to pop. Turn off the heat then sprinkle them with about 2 tbls tamari (wheat free soy) or a good quality soy sauce. Cool then store.
