What are some recipes for a fussy eater?

I’ve started personal training and my trainer gave me a meal plan, however I don’t like some of the lunch ideas and my trainer can only give me the ones he has, so I was wondering if you had any suggestions for lunch? We don’t have a fridge or microwave at work so that makes it harder to come up with some ideas. I don’t eat salads so that makes it difficult.

Not having a fridge makes it a bit tricky but not impossible. Canned fish might be the way to go. Try salmon, sardines and tuna (in moderation and get an ethical brand). Canned legumes are great also. You could take some roast veggies then make a wrap at work with the fish or mix them with the legumes to make a salad. You could make this before you left home if you get a little lunch box and pack an ice block in it, that way you can get a little creative. Mix together some brown rice, roast veggies, maybe cucumber, capsicum, radish, spring onions, herbs and any protein you like. Add some toasted seeds for an extra crunch.
